United States (FDA)

Approved

FDA has not banned it. Used in bread-making to strengthen dough. California requires cancer warning label (Prop 65).

European Union (EFSA)

Banned

Banned in EU, UK, Canada, China, Brazil, and many other countries since the 1990s.

Safety Profile

Banned in most developed countries EXCEPT the US. IARC classifies it as a possible carcinogen. One of the most controversial US-only permitted additives.

Health Concerns

  • Classified as possibly carcinogenic (IARC Group 2B)
  • Causes kidney tumors in animal studies
  • Should convert to harmless bromide during baking, but may not fully convert
